If you listen in a quiet setting with good headphones, I would use 192k VBR. Otherwise 128k VBR is probably ok. You can also save some space by using joint stereo.

Of course these are settings for encoding new files, you don't want to re-encode MP3s if you can help it because you'll lose quality.
